Yellow Fat and White Fat Biltong - What's the Difference?

Besides yellow fat biltong being super tasty, it can also be an amazing lean product as well. In fact, the following of our products are made from the exceptional quality beef: Biltong, Chili Bites, Dry Wors, Boerewors, Fatty Chili Cubes and Lean Biltong.

First off, you need to understand that there is a price difference between yellow fat and white fat biltong. Knowing the difference will help you decide which fatty biltong you prefer and will help you understand why there is a price difference between the two.

A and B Grade Beef (White Fat)

These graded carcasses are typically between 30 to 42 months old. Biltong can be made from these cuts however the fat will not be suitable for biltong as the fat is non translucent, not oily, tends to get stuck in your teeth, is not tasty and also has a higher calorie count. These grades of beef are cheaper than C grade as they are grain feed and cheaper to “maintain”. The truth is that most retail outlets sell these grades pre-packed at an average of between R350 – R500 per kg.  

C Grade Beef (Yellow Fat)

Here the carcasses are typically between 42 to 72 months old. The fat is of yellow colour and is absolutely perfect for top quality biltong! C Grade carcasses are more expensive due to the high demand and also cost of grass-feeding and “maintenance”. The grass-fed carcasses obtain the “yellow fat” from beta-carotene, a natural form of vitamin A – providing a translucent oily fat and also a much healthier biltong choice.
