Marmite, Biltong & Cheese Muffins – Perfect Father's Day breakfast

If you're a fan of bold, uniquely South African flavours, then you're going to love these Marmite, Biltong & Cheese Muffins. Perfect for breakfast on the go, snack time, or as a side for your next braai, these muffins are fluffy, cheesy, and packed with savoury goodness. The combo of biltong and Marmite gives them a delicious umami punch that will have everyone coming back for more!

🧁 Ingredients

• 75g finely chopped biltong

• 20ml melted butter

• 250ml all-purpose flour

• 5ml baking powder

• 10ml sugar

• 1 egg

• 125ml milk

• 125ml grated cheese (cheddar or your favourite hard cheese)

• 2 teaspoons Marmite

• Chopped chives (optional)

• Pinch of salt and Aromat to taste

👩🍳 Method

• Preheat your oven to 190°C and grease a muffin pan.

• In a large bowl, combine the flour, baking powder, sugar, salt, and Aromat.

• In a separate bowl, whisk the egg, milk, and Marmite until smooth. Then add the melted butter, grated cheese, chopped biltong, and chives (if using). Mix everything well.

• Gently fold the flour mixture into the wet ingredients. Be careful not to overmix .

• Spoon the mixture into the muffin pan, filling each cup about two-thirds full.

• Bake for approximately 15-20 minutes or until golden brown and a toothpick inserted comes out clean.

• Cool the muffins on a wire rack before serving (if you can wait that long!).

These muffins are best enjoyed warm, with a touch of butter or even a dollop of cream cheese. They also pair beautifully with a hot cup of rooibos or your favourite morning brew.
